Instructions:
1. Heat the oil in a large pot over medium heat.
2. Add the lamb and brown on all sides.
3. Add the onion and garlic, and cook until softened.
4. Stir in the tomatoes, potatoes, carrots, paprika, coriander, salt, and pepper.
5. Pour in the water or broth, bring to a boil, then reduce heat and simmer for 2 hours.
6. Serve hot, garnished with fresh herbs if desired.
Notes:
This stew is perfect for a cozy dinner. Feel free to add more vegetables if you like.
