Ingredients:  

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 can Chickpeas, drained and rinsed 15 oz can
  • 1 cup Diced tomatoes
  • 1 cup Chicken broth
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 2 tbsp Olive oil
  • to taste Salt and pepper
  • 1 tbsp Fresh parsley, chopped for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  • Add minced garlic, ground cumin, and paprika. Cook for another minute until fragrant.
  • Stir in diced tomatoes, chicken broth, and chickpeas. Bring to a simmer and cook for 15 minutes.
  • Add shrimp to the pot and cook until they are pink and cooked through, about 5 minutes.
  • Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes:

This stew pairs well with crusty bread or rice.
