Instructions:
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
Add minced garlic, ground cumin, and paprika. Cook for another minute until fragrant.
Stir in diced tomatoes, chicken broth, and chickpeas. Bring to a simmer and cook for 15 minutes.
Add shrimp to the pot and cook until they are pink and cooked through, about 5 minutes.
Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes:
This stew pairs well with crusty bread or rice.
