Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 cups sweet potatoes, peeled and cubed
  • 1 cup carrots, sliced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp salt
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 cup peanut butter
  • 1 cup spinach, chopped
  • 1 tbsp fresh cilantro, chopped for garnish

Instructions: 

  • Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  • Add the red bell pepper, sweet potatoes, and carrots. Cook for a few minutes, stirring occasionally.
  • Stir in the cumin, coriander, turmeric, and salt. Cook for another minute.
  • Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, until the vegetables are tender.
  • Stir in the peanut butter until well combined. Add the spinach and cook for another 5 minutes.
  • Serve hot, garnished with fresh cilantro.

Notes:

This stew is perfect for a cozy dinner and pairs well with rice or flatbread.
