diced tomatoes

peanut butter

spinach, chopped

fresh cilantro, chopped
for garnish
Instructions:
Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
Add the red bell pepper, sweet potatoes, and carrots. Cook for a few minutes, stirring occasionally.
Stir in the cumin, coriander, turmeric, and salt. Cook for another minute.
Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, until the vegetables are tender.
Stir in the peanut butter until well combined. Add the spinach and cook for another 5 minutes.
Serve hot, garnished with fresh cilantro.
Notes:
This stew is perfect for a cozy dinner and pairs well with rice or flatbread.
