Ingredients:  

Main Ingredients

  • 1 lb pork shoulder, cubed
  • 1 can chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • to taste salt and pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and cook until translucent.
  • 3. Add the minced garlic and cook for another minute.
  • 4. Add the cubed pork shoulder and cook until browned on all sides.
  • 5. Stir in the ground cumin and paprika.
  • 6. Add the diced tomatoes, chicken broth, and chickpeas. Bring to a boil.
  • 7. Reduce heat to low and let simmer for 30 minutes.
  • 8. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store in the fridge and reheat gently.
