pork shoulder, cubed

chickpeas, drained and rinsed

onion, chopped

cloves
garlic, minced

tsp
ground cumin

tsp
paprika
1
can
diced tomatoes

cups
chicken broth

tbsp
olive oil
to taste
salt and pepper
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until translucent.
3. Add the minced garlic and cook for another minute.
4. Add the cubed pork shoulder and cook until browned on all sides.
5. Stir in the ground cumin and paprika.
6. Add the diced tomatoes, chicken broth, and chickpeas. Bring to a boil.
7. Reduce heat to low and let simmer for 30 minutes.
8. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store in the fridge and reheat gently.
