Ingredients:  

Main Ingredients

  • 2 yams, peeled and diced
  • 1 bunch spinach, washed and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a pot over medium heat.
  • Add onions and garlic, sauté until translucent.
  • Add diced yams, cook for 5 minutes.
  • Pour in diced tomatoes and vegetable broth.
  • Season with paprika, salt, and pepper.
  • Simmer for 20 minutes or until yams are tender.
  • Stir in chopped spinach, cook until wilted.

Notes:

Serve hot with rice or bread.
