diced tomatoes

vegetable broth

Salt and pepper to taste

Instructions:
Heat olive oil in a pot over medium heat.
Add onions and garlic, sauté until translucent.
Add diced yams, cook for 5 minutes.
Pour in diced tomatoes and vegetable broth.
Season with paprika, salt, and pepper.
Simmer for 20 minutes or until yams are tender.
Stir in chopped spinach, cook until wilted.
Notes:
Serve hot with rice or bread.
