Ingredients:  

Main Ingredients

  • 1 kg Lamb shoulder cut into chunks
  • 2 large Carrots sliced
  • 2 large Parsnips sliced
  • 1 large Leek sliced
  • 4 cups Chicken stock
  • 2 large Potatoes peeled and cubed
  • to taste Salt and pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add the lamb chunks. Brown the meat on all sides.
  • 2. Add the sliced carrots, parsnips, and leek to the pot. Cook for a few minutes until they start to soften.
  • 3. Pour in the chicken stock and bring to a boil. Reduce the heat and let it simmer for about 1.5 hours.
  • 4. Add the cubed potatoes and continue to simmer for another 30 minutes, or until the potatoes are tender.
  • 5. Season with salt and pepper to taste. Serve hot.

Notes:

For a richer flavor, you can add a splash of Worcestershire sauce or a handful of fresh herbs like parsley or thyme.
