Lamb shoulder
cut into chunks

Salt and pepper
Instructions:
1. Heat a large pot over medium heat and add the lamb chunks. Brown the meat on all sides.
2. Add the sliced carrots, parsnips, and leek to the pot. Cook for a few minutes until they start to soften.
3. Pour in the chicken stock and bring to a boil. Reduce the heat and let it simmer for about 1.5 hours.
4. Add the cubed potatoes and continue to simmer for another 30 minutes, or until the potatoes are tender.
5. Season with salt and pepper to taste. Serve hot.
Notes:
For a richer flavor, you can add a splash of Worcestershire sauce or a handful of fresh herbs like parsley or thyme.
