green bananas (matoke), peeled and chopped

onion, chopped

tomatoes, chopped

bell pepper, chopped

cloves
garlic, minced

inch piece
ginger, minced

vegetable broth

vegetable oil
Salt and pepper to taste
Fresh cilantro for garnish
Instructions:
Heat oil in a pot over medium heat.
Add onions, garlic, and ginger. Sauté until fragrant.
Add tomatoes and bell pepper. Cook until soft.
Add matoke and vegetable broth. Bring to a boil.
Reduce heat and simmer for 30 minutes or until matoke is tender.
Season with salt and pepper. Garnish with cilantro.
