Ingredients:  

Main Ingredients

  • 6 green bananas (matoke), peeled and chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 inch piece ginger, minced
  • 1 cup vegetable broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions: 

  • Heat oil in a pot over medium heat.
  • Add onions, garlic, and ginger. Sauté until fragrant.
  • Add tomatoes and bell pepper. Cook until soft.
  • Add matoke and vegetable broth. Bring to a boil.
  • Reduce heat and simmer for 30 minutes or until matoke is tender.
  • Season with salt and pepper. Garnish with cilantro.
