Ingredients:  

Main Ingredients

  • 2 lbs Beef Stew Meat cut into chunks
  • 3 tbsp Butter
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 2 tbsp Tomato Paste
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste
  • 2 tbsp Flour optional, for thickening

Instructions: 

  • 1. In a large pot, melt the butter over medium heat.
  • 2. Add the beef and cook until browned on all sides.
  • 3. Add the chopped onion and minced garlic, cook until softened.
  • 4. Stir in the tomato paste, salt, and pepper.
  • 5. Pour in the beef broth and bring to a boil.
  • 6. Reduce heat, cover, and simmer for 1 hour.
  • 7. Add the carrots and potatoes, simmer for another 30 minutes or until vegetables are tender.
  • 8. If using, mix flour with a bit of water to make a slurry and stir into the stew to thicken.
  • 9. Adjust seasoning to taste and serve hot.

Notes:

For a richer flavor, you can add a splash of red wine when adding the broth.
