Ingredients:  

Stew Ingredients

  • 500 g Lamb shoulder, diced
  • 2 Carrots, chopped
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 500 ml Beef stock
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Dumpling Ingredients

  • 200 g Self-raising flour
  • 100 g Suet
  • 1 tsp Salt
  • 100 ml Cold water as needed

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil. Brown the lamb shoulder pieces.
  • 2. Add the chopped carrots, onion, and garlic. Cook until softened.
  • 3. Stir in the tomato paste, dried thyme, salt, and pepper.
  • 4. Pour in the beef stock and bring to a boil. Reduce heat and let it simmer for about 1.5 hours.
  • 5. For the dumplings, mix the self-raising flour, suet, and salt in a bowl. Add cold water gradually until you get a dough.
  • 6. Shape the dough into small balls and drop them into the stew. Cover and cook for another 20 minutes.
