Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 200 g chorizo sliced
  • 400 g canned tomatoes diced
  • 500 g cod fillets cut into chunks
  • 1 cup fish stock
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 handful fresh parsley chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and sliced chorizo, cook for another 3 minutes.
  • Stir in the diced tomatoes, fish stock, paprika, salt, and black pepper.
  • Bring to a simmer and cook for 10 minutes to let the flavors meld.
  • Add the cod chunks and cook until the fish is opaque and cooked through, about 5-7 minutes.
  • Garnish with chopped fresh parsley before serving.

Notes:

Serve with crusty bread for a complete meal.
