Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef and cook until browned on all sides.
3. Add the onion and garlic, and cook until softened.
4. Pour in the beef broth, and add the sweet potatoes, thyme, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for about 90 minutes, or until the beef is tender.
