Ingredients:  

Main Ingredients

  • 1 lb beef stew meat
  • 2 medium sweet potatoes peeled and cubed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef and cook until browned on all sides.
  • 3. Add the onion and garlic, and cook until softened.
  • 4. Pour in the beef broth, and add the sweet potatoes, thyme, salt, and pepper.
  • 5. Bring to a boil, then reduce heat and simmer for about 90 minutes, or until the beef is tender.
