Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and minced garlic, sauté until softened.
3. Add skirt steak chunks, cook until browned on all sides.
4. Pour in beef broth, add carrots and potatoes.
5. Season with salt and black pepper.
6. Bring to a boil, then reduce heat and simmer for 2 hours.
7. Serve hot and enjoy!
