Ingredients:  

Main Ingredients

  • 2 cups Corn kernels fresh or frozen
  • 1 cup Diced tomatoes canned or fresh
  • 1 cup Diced potatoes
  • 1 cup Chopped bell peppers any color
  • 1 cup Chopped onions
  • 4 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste

Instructions: 

  • 1. Heat a large pot over medium heat.
  • 2. Add the chopped onions, bell peppers, and garlic. Sauté until softened.
  • 3. Add the diced tomatoes, potatoes, and corn. Stir well.
  • 4. Pour in the vegetable broth and add the cumin, paprika, salt, and black pepper.
  • 5. Bring to a boil, then reduce heat and simmer for 30-45 minutes, until the potatoes are tender.
  • 6. Adjust seasoning if needed. Serve hot.

Notes:

For a richer flavor, you can add a splash of coconut milk towards the end of cooking.
