Instructions:
1. Heat a large pot over medium heat.
2. Add the chopped onions, bell peppers, and garlic. Sauté until softened.
3. Add the diced tomatoes, potatoes, and corn. Stir well.
4. Pour in the vegetable broth and add the cumin, paprika, salt, and black pepper.
5. Bring to a boil, then reduce heat and simmer for 30-45 minutes, until the potatoes are tender.
6. Adjust seasoning if needed. Serve hot.
Notes:
For a richer flavor, you can add a splash of coconut milk towards the end of cooking.
