Instructions:
Heat olive oil in a large pot over medium heat. Brown the beef in batches, then set aside.
In the same pot, sauté the onion, garlic, and bell peppers until softened.
Add the tomatoes, beef broth, red wine, paprika, salt, pepper, and bay leaves. Stir well.
Return the beef to the pot. Bring to a boil, then reduce heat and simmer for 2 hours, or until the beef is tender.
Remove bay leaves. Stir in parsley before serving.
Notes:
This stew is perfect for a cozy dinner. Serve with crusty bread.
