Ingredients:  

Main Ingredients

  • 2 lbs beef stew meat cut into chunks
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 bell peppers chopped
  • 2 large tomatoes chopped
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 bay leaves
  • 0.25 cup fresh parsley chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat. Brown the beef in batches, then set aside.
  • In the same pot, sauté the onion, garlic, and bell peppers until softened.
  • Add the tomatoes, beef broth, red wine, paprika, salt, pepper, and bay leaves. Stir well.
  • Return the beef to the pot. Bring to a boil, then reduce heat and simmer for 2 hours, or until the beef is tender.
  • Remove bay leaves. Stir in parsley before serving.

Notes:

This stew is perfect for a cozy dinner. Serve with crusty bread.
