Ingredients:  

Main Ingredients

  • 1 lb ground turkey
  • 1 cup breadcrumbs
  • 1 egg beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 cup frozen peas

Instructions: 

  • In a mixing bowl, combine ground turkey, breadcrumbs, beaten egg, garlic powder, onion powder, salt, and black pepper. Mix well and form into small meatballs.
  • Heat olive oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides. Remove meatballs and set aside.
  • In the same pot, add diced carrots, celery, and onion. Cook until vegetables are tender.
  • Add chicken broth, diced tomatoes, dried thyme, and dried basil to the pot. Bring to a boil.
  • Return meatballs to the pot. Reduce heat and simmer for 20 minutes.
  • Add frozen peas and cook for an additional 5 minutes. Serve hot.

Notes:

Feel free to add more vegetables or adjust the seasoning to your taste.
