Onion, chopped

Turmeric

Cinnamon

Salt and pepper
Instructions:
1. Heat the oil in a large pot over medium heat. Add the chopped onion and cook until golden.
2. Add the lamb cubes and brown on all sides.
3. Stir in the turmeric and cinnamon, and cook for another minute.
4. Add the sliced quinces and water. Bring to a boil, then reduce heat to low and simmer for 1.5 hours.
5. Season with salt and pepper to taste. Serve hot.
Notes:
This stew pairs well with saffron rice.
