Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder cut into chunks
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Chicken broth
  • 1 cup Tomato sauce
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Salt or to taste
  • 1 tsp Black pepper or to taste
  • 2 tbsp Lime juice freshly squeezed

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the pork chunks and brown on all sides.
  • 3. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  • 4. Stir in the cumin, oregano, salt, and black pepper.
  • 5. Pour in the chicken broth and tomato sauce, and bring to a boil.
  • 6. Reduce the heat to low, cover, and simmer for 1 hour and 30 minutes, or until the pork is tender.
  • 7. Stir in the lime juice just before serving.

Notes:

Serve with rice or warm tortillas.
