Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef stew meat and cook until browned on all sides.
3. Add chopped onions and garlic, cook until softened.
4. Pour in beef broth, add carrots and potatoes.
5. Season with salt and black pepper.
6. Bring to a boil, then reduce heat and simmer for 45-60 minutes until vegetables are tender.
Notes:
Feel free to add other vegetables like peas or corn for extra flavor.
