Instructions:
1. Heat the olive oil in a large pot over medium heat.

4. Pour in the beef broth, then add the carrots, potatoes, salt, pepper, thyme, and rosemary.
5. Bring to a boil, then reduce heat and simmer for 2 hours, or until the meat is tender.
6. Serve hot and enjoy!
Notes:
For a richer flavor, you can add a splash of red wine to the stew.
