Ingredients:  

Main Ingredients

  • 500 g Kangaroo meat, diced
  • 2 tbsp Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Beef broth
  • 1 cup Carrots, sliced
  • 2 cups Potatoes, diced
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Thyme
  • 1 tsp Rosemary

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the kangaroo meat and brown on all sides.
  • 3. Add the onion and garlic, cooking until softened.
  • 4. Pour in the beef broth, then add the carrots, potatoes, salt, pepper, thyme, and rosemary.
  • 5. Bring to a boil, then reduce heat and simmer for 2 hours, or until the meat is tender.
  • 6. Serve hot and enjoy!

Notes:

For a richer flavor, you can add a splash of red wine to the stew.
