Ingredients:  

Main Ingredients

  • 2 cups dried fabada beans
  • 1 chorizo sausage, sliced
  • 1 morcilla sausage, sliced
  • 1 ham hock
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Water

Instructions: 

  • Soak the beans overnight in water.
  • Drain and rinse the beans.
  • In a large pot, add the beans, chorizo, morcilla, ham hock, onion, garlic, bay leaf, and paprika.
  • Cover with water and bring to a boil.
  • Reduce heat and simmer for 1.5 hours or until beans are tender.
  • Season with salt and pepper to taste.

Notes:

For a richer flavor, use homemade chicken or vegetable broth instead of water.
