Ingredients:  

Main Ingredients

  • 2 cups Kidney Beans soaked overnight
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Tomato Paste
  • 1 tsp Ground Coriander
  • 1 tsp Ground Fenugreek
  • 1 tsp Paprika
  • to taste Salt
  • to taste Black Pepper
  • 2 tbsp Vegetable Oil
  • 4 cups Water
  • 1 bunch Cilantro chopped

Instructions: 

  • 1. Heat the oil in a pot over medium heat.
  • 2. Add the chopped onions and cook until translucent.
  • 3. Add the minced garlic and cook for another minute.
  • 4. Stir in the tomato paste, ground coriander, ground fenugreek, and paprika.
  • 5. Add the soaked kidney beans and water. Bring to a boil.
  • 6. Reduce the heat and simmer for about 45 minutes, or until the beans are tender.
  • 7. Season with salt and black pepper to taste.
  • 8. Stir in the chopped cilantro before serving.

Notes:

Serve with fresh bread or rice.
