Instructions:
Heat the vegetable oil in a large skillet over medium heat.
Add the sliced onion and minced garlic, and sauté until fragrant.
Add the bell pepper and cook for another 2-3 minutes.
Stir in the tomato sauce, water, thyme, paprika, salt, and black pepper. Bring to a simmer.
Add the tilapia fillets to the skillet, spooning some of the sauce over the fish.
Cover and cook for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
Serve hot with rice or your favorite side dish.
Notes:
This dish is best served with steamed rice or mashed potatoes.
