Equipment

Ingredients:  

Fufu

  • 2 cups Cassava flour
  • 4 cups Water

Chicken Stew

  • 1 kg Chicken pieces cut into chunks
  • 2 tbsp Vegetable oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 can Tomatoes diced
  • 1 tbsp Tomato paste
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • 1. In a pot, bring water to a boil. Gradually add cassava flour, stirring continuously until smooth and stretchy. This is your fufu. Set aside.
  • 2. Heat oil in another pot over medium heat. Add chopped onions and minced garlic, sauté until fragrant.
  • 3. Add chicken pieces and cook until browned on all sides.
  • 4. Stir in diced tomatoes, tomato paste, paprika, salt, and black pepper. Simmer for 30-40 minutes until chicken is cooked through and stew thickens.
  • 5. Serve the chicken stew hot with fufu on the side.

Notes:

Fufu is best enjoyed fresh. You can adjust the spices in the stew to your liking.
