Instructions:
1. In a pot, bring water to a boil. Gradually add cassava flour, stirring continuously until smooth and stretchy. This is your fufu. Set aside.
2. Heat oil in another pot over medium heat. Add chopped onions and minced garlic, sauté until fragrant.
3. Add chicken pieces and cook until browned on all sides.
4. Stir in diced tomatoes, tomato paste, paprika, salt, and black pepper. Simmer for 30-40 minutes until chicken is cooked through and stew thickens.
5. Serve the chicken stew hot with fufu on the side.
Notes:
Fufu is best enjoyed fresh. You can adjust the spices in the stew to your liking.
