Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, cook until softened.
3. Add the horse meat cubes and brown on all sides.
4. Add the sliced carrots, diced potatoes, paprika, thyme, salt, and black pepper. Stir well.
5. Pour in the beef broth and bring to a boil.
6. Reduce heat to low, cover, and simmer for about 2 hours or until the meat is tender.
7. Adjust seasoning if necessary and serve hot.
Notes:
Serve with crusty bread for a complete meal.
