Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onions and minced garlic, sauté until fragrant.
Add chopped callaloo leaves, stir well.
Pour in coconut milk and vegetable broth, bring to a simmer.
Season with thyme, salt, and black pepper. Simmer for 20-25 minutes.
Serve hot with rice or bread.
Notes:
Feel free to add other vegetables like carrots or bell peppers.
