Ingredients:  

Main Ingredients

  • 1 bunch Asparagus trimmed and cut into 1-inch pieces
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 2 medium Potatoes peeled and diced
  • 1 cup Frozen peas
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  • 2. Add the vegetable broth, diced potatoes, and bring to a boil. Reduce the heat and let it simmer for about 15 minutes.
  • 3. Add the asparagus pieces and frozen peas. Cook for another 10-15 minutes until the vegetables are tender.
  • 4. Season with salt and black pepper to taste. Serve hot.

Notes:

This asparagus stew is great served with crusty bread.
