Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into cubes
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Onions chopped
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add beef stew meat and cook until browned on all sides.
  • 3. Add onions and cook until softened.
  • 4. Stir in tomato paste, salt, and black pepper.
  • 5. Pour in beef broth and bring to a boil.
  • 6. Reduce heat to low, cover, and simmer for 1 hour.
  • 7. Add carrots and potatoes, and continue to simmer for another hour, or until vegetables are tender.
  • 8. Adjust seasoning if necessary and serve hot.

Notes:

Feel free to add other vegetables like peas or green beans.
