Ingredients:

red lentils

berbere spice mix

onion
finely chopped

cloves
garlic
minced

tbsp
ginger
minced

tbsp
tomato paste

water
to taste
salt
to taste
black pepper
Instructions:
1. Rinse the red lentils under cold water until the water runs clear.
2. In a large pot, sauté the chopped onion over medium heat until soft and golden.
3. Add the minced garlic and ginger, cook for another 2 minutes.
4. Stir in the berbere spice mix and tomato paste, cook for 1 minute.
5. Add the rinsed lentils and water to the pot. Bring to a boil.
6. Reduce the heat to low and simmer for 30-35 minutes, or until the lentils are tender.
7. Season with salt and black pepper to taste. Serve hot.
Notes:
This stew pairs well with injera or rice.
