Ingredients:  

Main Ingredients

  • 1 cup red lentils
  • 2 tbsp berbere spice mix
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger minced
  • 2 tbsp tomato paste
  • 4 cups water
  • to taste salt
  • to taste black pepper

Instructions: 

  • 1. Rinse the red lentils under cold water until the water runs clear.
  • 2. In a large pot, sauté the chopped onion over medium heat until soft and golden.
  • 3. Add the minced garlic and ginger, cook for another 2 minutes.
  • 4. Stir in the berbere spice mix and tomato paste, cook for 1 minute.
  • 5. Add the rinsed lentils and water to the pot. Bring to a boil.
  • 6. Reduce the heat to low and simmer for 30-35 minutes, or until the lentils are tender.
  • 7. Season with salt and black pepper to taste. Serve hot.

Notes:

This stew pairs well with injera or rice.
