African Sweet Potato Stew

Ingredients:  

Main Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 cup peanut butter
  • 1 bunch kale chopped
  • to taste salt
  • to taste black pepper

Instructions: 

  • 1. Heat a large pot over medium heat. Add the chopped onion and cook until softened.
  • 2. Add the minced garlic and grated ginger. Cook for another minute.
  • 3. Stir in the cumin, coriander, and turmeric. Cook for another minute.
  • 4. Add the cubed sweet potatoes, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • 5. Stir in the peanut butter until well combined. Add the chopped kale and cook until wilted.
  • 6. Season with salt and black pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
