peanut butter

Instructions:
1. Heat a large pot over medium heat. Add the chopped onion and cook until softened.
2. Add the minced garlic and grated ginger. Cook for another minute.
3. Stir in the cumin, coriander, and turmeric. Cook for another minute.
4. Add the cubed sweet potatoes, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
5. Stir in the peanut butter until well combined. Add the chopped kale and cook until wilted.
6. Season with salt and black pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
