Ingredients:  

Main Ingredients

  • 1 cup farro rinsed
  • 2 tbsp olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 cups mushrooms sliced
  • 2 cups carrots diced
  • 2 cups celery diced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste
  • 2 cups kale chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and cook until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute.
  • Add sliced mushrooms, diced carrots, and diced celery. Cook until vegetables are tender, about 10 minutes.
  • Add rinsed farro, vegetable broth, dried thyme, dried rosemary, salt, and black pepper. Bring to a boil.
  • Reduce heat to low and simmer for 30 minutes, or until farro is tender.
  • Stir in chopped kale and cook for another 5 minutes.
  • Serve hot and enjoy!

Notes:

This stew is perfect for a cozy night in. Feel free to add more vegetables or spices to suit your taste.
