Instructions:
1. Heat the oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
2. Add the onions, carrots, and garlic. Cook until the vegetables are softened.
3. Stir in the tomato paste and cook for another minute.
4. Pour in the beef broth, bring to a boil, then reduce heat and simmer for 1.5 hours or until the meat is tender.
5. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day, after the flavors have melded together.
