Ingredients:  

Pork Stew

  • 1 lb pork shoulder, cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, cubed
  • 1 tsp salt
  • 1/2 tsp black pepper

Dumplings

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp butter, melted

Instructions: 

  • 1. In a large pot, brown the pork shoulder over medium heat.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Pour in the chicken broth, add carrots and potatoes. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  • 4. In a mixing bowl, combine flour, baking powder, and salt for the dumplings. Stir in milk and melted butter until just combined.
  • 5. Drop spoonfuls of the dumpling batter onto the simmering stew. Cover and cook for another 30 minutes.
