Instructions:
1. In a large pot, heat some oil over medium heat and brown the beef chunks.
2. Add garlic and ginger, sauté until fragrant.
3. Pour in beef broth, fish sauce, soy sauce, and sugar. Stir well.
4. Add star anise, cinnamon stick, carrots, potatoes, and onion.
5. Bring to a boil, then reduce heat and let it simmer for about 2 hours, or until the beef is tender.
6. Serve hot with rice or bread.

Feel free to adjust the seasoning to your taste.
