Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, and sauté until softened.
3. Add the shredded turkey, frozen corn, frozen lima beans, diced tomatoes, chicken broth, and barbecue sauce to the pot.
4. Stir well to combine all ingredients.
5. Season with salt and black pepper.
6. Bring the mixture to a boil, then reduce the heat and let it simmer for about 45 minutes, stirring occasionally.
7. Serve hot and enjoy!
Notes:
This stew is a great way to use up leftover turkey. Feel free to add other vegetables you like.
