Ingredients:  

Main Ingredients

  • 2 cups cooked turkey, shredded
  • 1 cup frozen corn
  • 1 cup frozen lima beans
  • 1 cup diced tomatoes
  • 1 cup chicken broth
  • 1 cup barbecue sauce
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic, and sauté until softened.
  • 3. Add the shredded turkey, frozen corn, frozen lima beans, diced tomatoes, chicken broth, and barbecue sauce to the pot.
  • 4. Stir well to combine all ingredients.
  • 5. Season with salt and black pepper.
  • 6. Bring the mixture to a boil, then reduce the heat and let it simmer for about 45 minutes, stirring occasionally.
  • 7. Serve hot and enjoy!

Notes:

This stew is a great way to use up leftover turkey. Feel free to add other vegetables you like.
