Salt and pepper
Instructions:
1. In a Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside.
2. In the same pot, brown the chicken pieces on all sides. Remove and set aside.
3. Add the onions, carrots, and garlic to the pot. Cook until softened.
4. Stir in the tomato paste, thyme, and bay leaf. Cook for another minute.
5. Pour in the red wine and chicken broth. Bring to a boil.
6. Return the chicken and bacon to the pot. Add the mushrooms.
7. Reduce heat to low, cover, and simmer for 1.5 to 2 hours.
8. Season with salt and pepper to taste. Serve hot.
Notes:
Best served with crusty bread or mashed potatoes.
