Instructions:
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the beef cubes and brown them on all sides.
3. Add the chopped onion and minced garlic, cook until softened.
4. Pour in the beef broth and bring to a boil.
5. Add the carrots, potatoes, salt, pepper, and thyme.
6. Reduce the heat to low, cover, and simmer for about 2 hours, or until the meat is tender.
7. Adjust seasoning to taste and serve hot.
Notes:
This stew is even better the next day, once the flavors have melded together.
