Instructions:
Heat olive oil in a large pot over medium heat.
Add the chicken pieces and brown on all sides. Remove and set aside.
In the same pot, add the chopped onion and garlic. Sauté until softened.
Add the bell peppers and cook for another 5 minutes.
Return the chicken to the pot. Add the diced tomatoes, chicken broth, paprika, salt, and black pepper.
Bring to a boil, then reduce heat and simmer for 45 minutes, or until the chicken is cooked through and tender.
Serve hot with crusty bread or over rice.
Notes:
This stew is even better the next day, so consider making it ahead of time.
