Ingredients:  

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 large Red Bell Pepper chopped
  • 1 large Green Bell Pepper chopped
  • 1 cup Tomatoes diced
  • 1 cup Chicken Broth
  • 1 tsp Paprika
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add the chicken pieces and brown on all sides. Remove and set aside.
  • In the same pot, add the chopped onion and garlic. Sauté until softened.
  • Add the bell peppers and cook for another 5 minutes.
  • Return the chicken to the pot. Add the diced tomatoes, chicken broth, paprika, salt, and black pepper.
  • Bring to a boil, then reduce heat and simmer for 45 minutes, or until the chicken is cooked through and tender.
  • Serve hot with crusty bread or over rice.

Notes:

This stew is even better the next day, so consider making it ahead of time.
