Ingredients:  

Main Ingredients

  • 2 lbs Beef Stew Meat cut into chunks
  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Beef Broth
  • 1 cup Red Wine
  • 2 tbsp Tomato Paste
  • 1 tsp Caraway Seeds
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • to taste Salt and Pepper

Instructions: 

  • Heat olive oil in a large pot over medium-high heat. Add beef and brown on all sides. Remove and set aside.
  • In the same pot, add onions and garlic. Cook until softened.
  • Stir in tomato paste and caraway seeds. Cook for another minute.
  • Return beef to the pot. Add beef broth, red wine, carrots, and potatoes. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 2 hours or until beef is tender. Season with salt and pepper to taste.

Notes:

Serve hot with crusty bread.
