Chickpeas, drained and rinsed

Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent.
Stir in minced garlic and chopped red bell pepper, cook for another 5 minutes.
Add sliced chorizo, smoked paprika, and cumin. Cook for 5 minutes.
Pour in diced tomatoes and chicken broth. Bring to a boil.
Add chickpeas, reduce heat, and simmer for 30 minutes.
Season with salt and pepper to taste.
Garnish with chopped fresh parsley before serving.
Notes:
This stew is perfect for a cold evening. Serve with crusty bread.
