Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 lb Chorizo, sliced
  • 1 tsp Smoked Paprika
  • 1 tsp Cumin
  • 1 can Diced Tomatoes
  • 2 cups Chicken Broth
  • 1 can Chickpeas, drained and rinsed
  • to taste Salt and Pepper
  • 1 tbsp Fresh Parsley, chopped for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent.
  • Stir in minced garlic and chopped red bell pepper, cook for another 5 minutes.
  • Add sliced chorizo, smoked paprika, and cumin. Cook for 5 minutes.
  • Pour in diced tomatoes and chicken broth. Bring to a boil.
  • Add chickpeas, reduce heat, and simmer for 30 minutes.
  • Season with salt and pepper to taste.
  • Garnish with chopped fresh parsley before serving.

Notes:

This stew is perfect for a cold evening. Serve with crusty bread.
