Ingredients:  

Main Ingredients

  • 2 cups Acorns (leached and ground)
  • 1 lb Meat (beef or venison, cubed)
  • 2 cups Vegetables (carrots, potatoes, celery, chopped)
  • 1 large Onion (chopped)
  • 3 cloves Garlic (minced)
  • 4 cups Broth (beef or vegetable)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • 1. In a large pot, brown the meat over medium heat.
  • 2. Add the chopped onion and garlic, cook until softened.
  • 3. Stir in the vegetables and cook for another 5 minutes.
  • 4. Add the ground acorns and mix well.
  • 5. Pour in the broth, add salt and pepper, and bring to a boil.
  • 6. Reduce heat and let it simmer for about 1 hour, until the meat is tender and the flavors are well blended.
  • 7. Serve hot and enjoy!

Notes:

Leaching acorns is necessary to remove tannins. Soak them in water, changing the water several times until it runs clear.
