Ingredients:  

Main Ingredients

  • 1 lb Pork shoulder cut into cubes
  • 1 cup Hominy
  • 2 cups Chicken broth
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 Bay leaves

Instructions: 

  • 1. Heat a large pot over medium heat. Add the pork shoulder and cook until browned on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the cumin, oregano, salt, and black pepper. Cook for another minute.
  • 4. Add the hominy, chicken broth, and bay leaves. Bring to a boil.
  • 5. Reduce heat to low and let simmer for about 40 minutes, or until the pork is tender.
  • 6. Remove bay leaves before serving. Enjoy your Zuni Stew!

Notes:

This stew is perfect for a cozy dinner. Serve with warm tortillas or crusty bread.
