Ingredients:  

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 lb Scallops
  • 2 tbsp Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can Diced tomatoes (14.5 oz)
  • 4 cups Fish stock
  • 1 tsp Thyme dried
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 cup Fresh parsley, chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute.
  • Pour in diced tomatoes and fish stock. Bring to a simmer.
  • Add thyme, salt, and black pepper. Simmer for 10 minutes.
  • Add shrimp and scallops to the pot. Cook until seafood is opaque, about 5-7 minutes.
  • Stir in fresh parsley before serving.

Notes:

Serve with crusty bread for a complete meal.
