Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Pour in diced tomatoes and fish stock. Bring to a simmer.
Add thyme, salt, and black pepper. Simmer for 10 minutes.
Add shrimp and scallops to the pot. Cook until seafood is opaque, about 5-7 minutes.
Stir in fresh parsley before serving.
Notes:
Serve with crusty bread for a complete meal.
