Instructions:
Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
Add chopped onion and minced garlic to the pot. Cook until onions are translucent.
Stir in peanut butter, soy sauce, and tomato paste. Mix well.
Pour in beef broth and bring to a boil. Reduce heat and let it simmer for 1 hour.
Add sliced carrots and diced potatoes. Cook for another 30 minutes or until vegetables are tender.
Season with salt and black pepper to taste. Serve hot.
Notes:
Feel free to adjust the peanut butter amount to your taste.
