Ingredients:  

Main Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup red chili sauce
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil

Instructions: 

  • 1. Heat the oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
  • 2. Remove the pork and set aside. In the same pot, add the onion and garlic, and cook until softened.
  • 3. Return the pork to the pot. Add the chicken broth, red chili sauce, cumin, oregano, salt, and pepper.
  • 4. Bring to a boil, then reduce heat to low. Cover and simmer for about 2 hours, or until the pork is tender.
  • 5. Serve hot with rice or tortillas.

Notes:

This stew is perfect for a cozy dinner. Adjust the spice level by adding more or less chili sauce.
