Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the beef chunks and brown them on all sides. Remove and set aside.
3. In the same pot, add the onion and garlic. Cook until softened.
4. Add the parsnips, beef broth, tomato paste, thyme, salt, and pepper. Stir well.
5. Return the beef to the pot. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the beef is tender.
6. Adjust seasoning if needed. Serve hot.
Notes:
Feel free to add other root vegetables like carrots or potatoes.
