Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 2 Parsnips peeled and chopped
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 1 tsp Thyme dried
  • 1 tsp Salt or to taste
  • 0.5 tsp Black Pepper ground

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the beef chunks and brown them on all sides. Remove and set aside.
  • 3. In the same pot, add the onion and garlic. Cook until softened.
  • 4. Add the parsnips, beef broth, tomato paste, thyme, salt, and pepper. Stir well.
  • 5. Return the beef to the pot. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the beef is tender.
  • 6. Adjust seasoning if needed. Serve hot.

Notes:

Feel free to add other root vegetables like carrots or potatoes.
