Ingredients:  

Main Ingredients

  • 2 lbs Yams peeled and cubed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive Oil
  • 1 can Diced Tomatoes 14.5 oz
  • 2 cups Vegetable Broth
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper to taste
  • 1 tsp Paprika
  • 1 tsp Thyme dried

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onions and minced garlic, sauté until onions are translucent.
  • 3. Add cubed yams, diced tomatoes, and vegetable broth. Stir to combine.
  • 4. Season with salt, black pepper, paprika, and thyme. Bring to a boil.
  • 5. Reduce heat to low, cover, and simmer for 45 minutes or until yams are tender.
  • 6. Serve hot and enjoy!
