Ingredients:  

Main Ingredients

  • 1 lb Shrimp peeled and deveined
  • 1 cup Onion chopped
  • 1 cup Bell Pepper chopped
  • 1 cup Celery chopped
  • 3 cloves Garlic minced
  • 2 tbsp Olive Oil
  • 2 tbsp Cajun Seasoning
  • 4 cups Chicken Broth
  • 1 can Diced Tomatoes (14.5 oz)
  • 2 tbsp Tomato Paste
  • 2 cups Okra sliced
  • 2 cups Cooked Rice

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  • Add garlic and cook for another minute.
  • Stir in Cajun seasoning, chicken broth, diced tomatoes, and tomato paste. Bring to a boil.
  • Reduce heat and simmer for 15 minutes.
  • Add shrimp and okra. Cook until shrimp is pink and cooked through, about 5-7 minutes.
  • Serve hot over cooked rice.

Notes:

Adjust the level of Cajun seasoning to your taste.
