Instructions:
Heat olive oil in a large pot over medium heat.
Add onion, bell pepper, and celery. Cook until softened, about 5 minutes.
Add garlic and cook for another minute.
Stir in Cajun seasoning, chicken broth, diced tomatoes, and tomato paste. Bring to a boil.
Reduce heat and simmer for 15 minutes.
Add shrimp and okra. Cook until shrimp is pink and cooked through, about 5-7 minutes.
Serve hot over cooked rice.
Notes:
Adjust the level of Cajun seasoning to your taste.
