Ingredients:  

Main Ingredients

  • 4 cups Beetroot, peeled and diced
  • 1 cup Carrots, diced
  • 1 cup Potatoes, diced
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Thyme

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and garlic, and sauté until softened.
  • 3. Add the diced beetroot, carrots, and potatoes. Cook for about 5 minutes.
  • 4. Pour in the vegetable broth, and add salt, pepper, and thyme.
  • 5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until vegetables are tender.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add other vegetables or spices to taste.
