Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until softened.
3. Add the diced beetroot, carrots, and potatoes. Cook for about 5 minutes.
4. Pour in the vegetable broth, and add salt, pepper, and thyme.
5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until vegetables are tender.
6. Serve hot and enjoy!
Notes:
Feel free to add other vegetables or spices to taste.
