Instructions:
Heat olive oil in a large pot over medium heat.
Add pork and cook until browned on all sides.
Add onion, bell pepper, and garlic. Cook until vegetables are tender.
Stir in chicken broth, diced tomatoes, Cajun seasoning, salt, and black pepper.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Serve hot.
