Ingredients:  

Main Ingredients

  • 2 medium Yams peeled and diced
  • 4 Eggs beaten
  • 1 cup Tomato Sauce
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 tbsp Vegetable Oil

Instructions: 

  • 1. Heat the oil in a pot over medium heat.
  • 2. Add the chopped onions and minced garlic, sauté until fragrant.
  • 3. Add the diced yams and stir well.
  • 4. Pour in the tomato sauce, salt, and black pepper. Stir to combine.
  • 5. Cover the pot and let it simmer for about 20 minutes, or until the yams are tender.
  • 6. Slowly pour the beaten eggs into the pot, stirring continuously to create ribbons of egg throughout the stew.
  • 7. Cook for another 5 minutes, then remove from heat.
  • 8. Serve hot and enjoy!
